SIMPLE LEMON PICKLE

Ingredients Recipe Recipe
 Lemons 7 medium
Turmeric pwd 1/4 tspn
Chilli pwd 2 tspns
Salt 3 tspn
Boil the lemons in 2 cups of water in a pressure cooker for 5 whistles.
Drain. Cool and cut into cubes.
Add all the ingredients and mix well.
Store in a bottle in the fridge.

 

LIME AND GINGER PICKLE

 Lemons 8
Salt ¼ cup
Turmeric pwd 1/2 tspn
Green chilli 4
Ginger 1 tbspn cut into strips
Red chilli pwd 2 tspn (Coarse)
 Halve 4 lemons and squeeze out the juice. Keep the peels aside.
Add the salt, chilli pwd turmeric pwd, green chilli and ginger to the juice.
Cut the 4 remaining lemons into small cubes.
In a clean jar place the cubed lemon pieces. Add the lemon juice.
Keep this in the sun for 4-5 days.

 

SWEET AND SOUR LIME PICKLE

 Lemons 12
Salt 2 tbspns
Sugar 3 1/2 cups
Chilli pwd 1 tbspn
 Wash and dry the lemons. Squeeze the juice of 5 lemons.
Cut the remaining lemons into small pieces.
Dice the peels, from which juice was extracted and add.
In the lemon juice mix the salt and turmeric pwd.
Pour over the diced lemons. Cover with a lid and keep in the sun for 8-10 days.
Add sugar and mix well. Leave in the sun for 8-10 days.
Mix occasionally so that the sugar melts.
Add chilli pwd and mix well.
This can be stored for a year.

 

MANGO PICKLE

 Raw mango 1 kg cubed
Salt 100 Gms
Turmeric pwd 1 tspn
Chilli pwd 3 tbspns
Mustard pwd 3 tbspns
Fenugreek pwd 2 tbspns (roasted and coarsely powdered)
Saunf /Aniseed 3 tbspns (roasted and coarsely ground)
Mustard oil 2 cups
Add a tspn of salt (from the 100 gms) and turmeric pwd to the cubed mango.
Mix well and keep on a sieve for the extra water to drain.
Leave for an hour or two. Place the pieces in a big bowl.
Add all the masala and remaining salt and mix well.
Heat oil in a pan till it smokes. Add to the mango pieces.
Mix well and store in a sterilized jar. There should be a layer of oil on the top.

 

SWEET MANGO PICKLE

 Mango 1 kg Peeled and cubed
Sugar 1 kg
Salt 1 tbspn
Chilli pwd 1 tbspn
Cumin seeds 1 tbspn Roasted and coarsely powdered.
Turmeric pwd 1 tspn
Fenugreek 1tbspn roasted and coarsely powdered
Aniseed 1 tbspn roasted and coarsely powdered.
 Add the sugar and salt and turmeric pwd to the mango pieces.
Mix well and keep aside for an hour.
Mix well and cook on the gas stirring constantly.
Add the chilli, fenugreek and aniseed powders and mix well.
Cool and store in a sterilized jar. (The sugar syrup should have 1 thread consistency.)

 

GREEN CHILLI PICKLE

 Green chilli 200 gms
Mustard pwd 1 cup
Salt 1/2 cup
Lime juice 1 cup
Fenugreek seeds 1/2 tspn
Turmeric pwd 1 tspn
 Wash the green chilli, and slit them lengthwise.
Mix the salt, turmeric and fenugreek seeds together.
Stuff the green Chillies with this powder and place in a clean jar.
Pour the limejuice on top
Ready to eat after 1 day.

 

FRESH RED CHILLI PICKLE

 Fresh red chilli 1 cup diced into thin rings
Limejuice 1/2 cup
Mustard pwd 2 tbspns
Salt 2 tbspns
Oil 1/2 cupv Citric acid 1 tspn
 Mix all the ingredients except oil.
Heat oil and cool and add. Mix well
Ready in 1 day.
