Maida 500 gms sieved (Refined flour) Curd 2 tbspns Salt 1 tspn Fat 2 tspns Ghee or butter or Oil Potatoes 3 medium boiled and mashed Oil to deep fry |
Mix the flour, curds, ghee potatoes and salt and knead into a dough. The dough should not be too hard or too soft. Make 15 round balls. Roll into puris with a little dry flour. Heat oil till it smokes and deep fry. |

Mix the curds in the semolina and leave for 5 minutes. Add the flour, salt, sugar, Soda bi carb and oil and knead to dough. Break into 12-13 balls and poll into puris. Heat oil and deep fry. |
METHI PARATHAS

Whole Wheat flour 3 cups Fenugreek leaves 2 cups chopped Green chilli paste 1 tspn Cumin seeds ½ tspn Oil 2 tbspns Turmeric pwd 1 tspn Salt to taste Garlic paste 1 tspn (Optional) Oil for roasting parathas |
Mix all the ingredients and make medium soft dough. Break into rounds and poll into Parathas. Heat a tava or griddle and roast the parathas, adding a little oil. Flip and roast the other side. |
ONION PARATHAS

Whole wheat flour 3 cups Onions chopped 2 cups Cumin seeds 1 tspn Red chilli pwd 1 tspn Salt 1 tspn Oil 2 tspns Coriander chopped ½ cup Dry mango pwd 1 tspn Oil for roasting |
Mix all the ingredients to medium soft dough. Heat a griddle. Roll out parathas and apply oil and roast. Flip and roast the other side. |
NAAN

Plain flour 2 cups Fresh yeast 1 tspn crumbled Sugar 1 tspn Oil 1 tbspn Salt 1 tspn |
Mix the sugar and yeast in 1 cup lukewarm water. Leave aside for 5 minutes. Add the salt and oil and the yeast and knead the dough. Knead thoroughly. Cover with a moist cloth and keep aside for 1-2 hours. Divide dough into 10- 12 portions. Heat a tava or griddle. Roll the naan. Slightly wet one side with water. Stick the wet side to a hot tava and roast. Turn the tava upside down and roast. Brush with butter and serve. Can be made in a gas Tandoor. If fresh yeast is not available, dry yeast can be used in the same way. |
