🥥 Karnataka Konkani Dish: Yogiratna (Valval) Recipe Making
Valval, also known as Yogiratna, is a light, mildly spiced Konkani curry made with mixed vegetables simmered in coconut milk — a perfect comfort food from coastal Karnataka.
Ingredients
Mixed vegetables (like carrot, beans, pumpkin, ash gourd, potato) – 2 cups (chopped)
Thick coconut milk – 1 cup
Thin coconut milk – 1½ cups
Green chillies – 2 (slit)
Ghee – 1 tbsp
Cumin seeds – ½ tsp
Curry leaves – few
Salt – to taste
Method
Cook the vegetables
In a pan, add all chopped vegetables and thin coconut milk.
Cook until the vegetables turn soft (not mushy).
Add flavour
Add salt and slit green chillies.
Pour in the thick coconut milk and gently simmer (do not boil).
Prepare tempering
Heat ghee in a small pan.
Add cumin seeds and curry leaves.
Pour this fragrant tempering over the curry.
Mix gently and serve warm with steamed rice or neer dosa.
Tip
To preserve the delicate coconut flavour, never boil after adding thick coconut milk.
